Mexico Mobile Teaching Kitchen Cookbook

This cookbook, the inaugural Mexico Edition of the Mobile Teaching Kitchen series, has been created through the creativity, knowledge, and dedication of nutrition students and professors at Tecnológico de Monterrey. Rooted in the mission of the Mexican Mobile Teaching Kitchen, its goals are to empower and educate communities through culinary nutrition, creating healthy, affordable meals and sharing practical dietary advice with friends, families, and local networks. Each copy of this cookbook contributes to sustaining and expanding the Mobile Teaching Kitchen’s work in Mexico.

The recipes have been developed in collaboration with local nutrition experts, drawing on both Mexico’s rich culinary heritage and the latest nutritional science. Each dish is balanced and thoughtfully designed to address common nutritional needs while celebrating traditional ingredients, seasonal produce, and sustainable cooking practices. This unique collection provides you with the complete repertoire of nutritious MTK menus, along with the guidance to recreate them at home, bringing healthy, delicious, and culturally resonant meals to your table while inspiring healthier diets in the community.
About the project
The Mexican Mobile Teaching Kitchen (MTK) is part of the global Mobile Teaching Kitchen International Initiative, which empowers communities through hands-on culinary nutrition education. Launched in collaboration with Tecnológico de Monterrey, the Mexican MTK combines local food culture with evidence-based nutrition, aiming to improve health, promote sustainability, and strengthen community resilience.

At its heart, the MTK is more than a kitchen, it is a moving classroom. Students, professors, and community members work side by side to prepare affordable, nutritious, and culturally relevant meals, while learning and sharing practical skills in healthy cooking, food hygiene, and sustainable meal planning.

The project focuses on three core goals:
Empowerment – equipping individuals with the knowledge and skills to make healthy food choices.
Sustainability – promoting environmentally friendly cooking and the use of local, seasonal ingredients.
Community Engagement – fostering social connection and spreading nutrition education through peer-to-peer teaching.

By combining traditional Mexican flavours with modern nutrition principles, the MTK offers a model that can be adapted and replicated worldwide. This cookbook captures that spirit—bringing the MTK’s recipes, creativity, and educational mission directly into your kitchen.
